Artichokes filled with parsley (Qaqocc mimli)

You might be seeing a ‘stuffed’ theme arising. Yes, we tend to try to stuff everything – from vegetables, to meat, and ourselves. Stuffed artichokes are wonderfully tasty and very easy to prepare and cook. I love them drizzled with olive oil, served with boiled potatoes, canned tuna, and of course tomato paste (one of our many staples)….

Pasta shells filled with ricotta and baked in a tomato meat sauce

I just love pasta shells filled with ricotta and baked in a tomato meat sauce. I think we may have stolen this from the Italians but I am sure they don’t mind. Our food has been influenced from many cultures including Italian. Traditionally instead of mince beef/pork, corned beef is used. I love corned beef but don’t have it very often. I actually don’t think I  have ever had it while I have lived in London which has been ten years but I remember eating it in Australia. My father loved it. More on corned beef another time though.

Nanna has arrived!

Nanna (my mum) arrived in London this morning at 7.30am from Australia and is here for five weeks. The girls were exhausted this evening from all the excitement.

I am sure she will not only critique my cooking but most likely will try to take over in the kitchen. It will at least give me a chance to prepare more Maltese recipes, blog and share with you. I can’t wait.
