Ingredients are kept minimal. This dish is all about the sea urchins being show cased.

Serves: 2 portions
Ingredients
  • 1 garlic clove crushed
  • 1 tomato diced
  • 1 tablespoon of mint and 1 tablespoon of parsley
  • 250 grams spaghetti or any thin pasta
  • ½ lemon squeezed
  • 50 grams sea urchins which have been removed from their shells.
  • Olive oil
  • Salt and pepper
Instructions
  1. Prepare your pasta by boiling a large pot of water.
  2. Add in the pasta and cook as per instructions.
  3. While the pasta is cooking in a frying pan fry the garlic with some olive oil for about 15 seconds
  4. Add in the diced tomato and fry for a few minutes.
  5. Add in the mint and parsley.
  6. Turn off the heat.
  7. Drain the pasta and place back in the pot.
  8. Add in the tomato mixture and mix.
  9. Add in the lemon juice, sea urchins and mix well.
  10. Season with salt and pepper and a little more olive oil.
  11. Serve immediately
