Blood orange compote with almond and mint

This marmalade/compote is inspired by our Maltese blood oranges and includes mint and almonds. Other handy ingredients found in any Maltese kitchen. If you don't have blood oranges then you can use normal oranges.

Ingredients
  • 5 blood oranges (about 800 grams)
  • 450 grams honey
  • Zest and juice of 1 lemon
  • 100 grams blanched almonds roughly chopped
  • Small bunch of mint chopped.
Instructions
  1. Peel the oranges and slice the peel thinly. Chop the remaining peeled oranges into small pieces.
  2. Add all ingredients together in a pot except for the mint.
  3. Mix and bring to the boil.
  4. Simmer for 2 hours.
  5. Remove from the heat and mix in the mint.
  6. Add into a sterilised jar and place in the fridge once cool.
